It is school holidays and yesterday I sat down with my granddaughter to make a list of things she likes to do so that when I insist that she put away her digital device, she won't be stuck for something to do! Cooking is a popular activity with almost all kids and it was on her list. In these times when so many kids are overweight, it is vital to cook nutritional food with them. We had just been given some home grown eggs so I suggested she cook an egg dish for lunch. After a quick search on Google, we decided on banana pancakes.
I closely supervised the cooking, especially turning the pancakes in the hot pan, but how she enjoyed them. She decided to spread them with avocado.There they are above, with one bite gone!
Today she asked if she could make herself a milkshake for lunch and again chose avocado and made it entirely by herself. She didn't add sugar, just one scoop of ice cream, and proudly asked me to photograph it so she could send it to her cousin to prove that she ate healthy food. It was rather too big for one meal so stored in the fridge, it served as an afternoon tea snack as well.

My mail today included nutritional tips from Early Childhood Australia. I particularly liked the following recipe they gave.

As it serves 40 children it is ideal for a child care centre, but can easily be adapted for use in a family. One piece of fruit topped with yoghurt mixed with crushed strawberries and a teaspoon of honey weill taste delicious and be easy for small children to prepare. I think it will be the next thing my granddaughter will want to prepare.
